Lions Mane
(Hericium erinaceus)
AKA - Bearded Tooth Mushroom, Hedgehog Mushroom, Satyr's Beard, Bearded Hedgehog Mushroom, pom pom mushroom, or Bearded Tooth Fungus)
This is a choice edible and medicinal in the tooth fungus group.
Awesome in cream or red sauces.
This nutritious mushroom is roughly 20 percent protein and one of the few that can taste like lobster or shrimp
(Stamets, 2005).
Lion's mane mushrooms are increasingly studied for their neuroprotective effects. Two novel classes of Nerve Growth Factors (NGFs) -- molecules stimulating the differentiation and re-myelination of neurons -- have been discovered in this mushroom so far. These cyathane derivatives are termed "hericenones" and "erinacines."

Oyster Mushrooms
Golden Yellow Oysters - (Pleurotus citrinopileatus) - Warm nutty flavor
This mushroom pairs well with seafood, pork, garlic, ginger, soy, tomatoes, Asian vegetables, and pot herbs. Saute with onions and garlic.
Must be cooked 20 minutes or will be bitter. Awesome on top of salads.
Flamingo Pink - (Pleurotus djamor)
Their color is intensely pink when raw and changes to an orange-brown color when cooked. Pink Flamingo oyster mushrooms taste like bacon or ham and their flavor intensifies when cooked. The aroma is pungent, which is very characteristic of the oyster mushroom.
Old World Blue Oysters
(Pleurotus ostreatus var. columbinus)
Mild and Meaty tasting. Great for soups and pan fried.
Phoenix Oysters
Great to cut up and add to any dish! Also great sauteed with fresh onions and garlic.
Shiitakes on Sawdust Blocks
The “block” is composed mainly of hardwood sawdust and wood chips bound together with mushroom tissue or “mycelium” contained in a plastic bag. Mycelium is the white fluffy material covering the outside of the block. This will naturally turn brown as the block matures.
Shiitakes on Logs
Shiitake mushrooms are among the most widely grown mushroom in the world, second only to the common button mushroom. Log-grown shiitake mushrooms are relatively easy to raise, certified organic, and use to create a small-scale commercial operation if you have the basics: space, shade, access to hardwood logs and water. Shiitake growing is a great way to make use of forest or marginal land, such as steep hillsides that may not have other uses.
Turkey Tail Mushroom - Medicinal
Trametes Versicolor – also known as Coriolus Versicolor and Polyporus versicolor – is a common polypore mushroom found throughout the world. Immunity -- as measured by the number of lymphocyte cells and natural killer cell activity -- usually declines dramatically after radiotherapy. Natural killer (NK) cells protect us from tumors and viruses.
Reishi Mushroom - Medicinal
Reishi - The iconic mushroom commonly known as Reishi (in Japanese) or Ling Zhi (靈芝 in Chinese) is probably the most respected medicinal mushroom in Asia. The earliest mention of Ling Zhi was in the era of the first emperor of China, Shinghuang of the Ch'in Dynasty 221-207 B.C.E.
